Vulcanica #7 Pivnica Čajkov orange sparkling 2020/2021 12.5%

A remarkable and delicious wine from Slovakia. A base wine is made blended from 2020 Pinot Gris (3 weeks skin contact) and 2021 Pesecká Leánka (3 days skin contact), and then a second fermentation is begun in bottle using a fresh vintage of Pesecká Leánka. Sounds complicated but it adds up to a delicious orange fizz, vibrant, complex, creamy bubbles and refreshing acidity. Wow!

Pairing: A wine that doesn't long for too much food, enjoy it on its own with a salty snack.
